Chicken Yassa is a mouthwatering West African comfort food that the whole world needs to know about. Delicious tender chicken and caramelized onions in a sweet, spicy, lemony sauce.

Chicken Yassa is a famously popular recipe across West Africa. It’s one of those simply delicious dishes: just a few ingredients that are transformed, by the magic of cooking, into an exciting and comforting meal.

Chicken, onions, lemon juice, garlic, Dijon mustard and some jalapenos to infuse a perfect amount of kick! After marinating, browning and a slow braise, you get a mouthwatering tender chicken and sweet, caramelized onions in a captivating sweet-tangy-spicy sauce.

Ingredients (4 – 6 servings)

Proteins & Vegetables

  • 4 boneless thighs (or thin boneless breast)
  • 1 green bell pepper
  • 3 whites and greens scallions
  • 2 yellow onions
  • 2 carrots
  • 2 jalapeños (or 1/2 to 1 teaspoon red-pepper flakes)
  • 2 garlic cloves

Seasoning

  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon fresh thyme (or 1/2 teaspoon dried thyme)
  • 1 teaspoon white vinegar (or apple cider vinegar)
  • 1/4 cup lemon juice (fresh preferred), more as needed
  • 1 cup vegetable or canola oil, more as needed
  • 1 teaspoon Mrs. Dash
  • 1 teaspoon fresh ginger
  • 3 fresh or dried bay leaves
  • 2 teaspoons Dijon mustard
  • 1 cup BBQ sauce
