Chicken/Tofu Pepper Soup

This healthy “immune boosting” pepper soup recipe is a popular Nigerian favorite. This light soup is spicy and packs a punch with some bold west African flavors and fresh spices.

On top of being delicious, it is also very versatile. If you’re vegan you can definitely develop some amazing flavors with shitake mushrooms, tofu, seitan and other meat substitutes.

Zobo

Zobo is a Nigerian drink from the northern parts of the country, that has become very popular all over the country. It is rare to meet a Nigerian who does not love Zobo! Like a tea, and it has several health benefits, like lowering blood pressure and reducing high cholesterol.

Ingredients

  • Chicken Breast, Tofu or other substitute
  • Ginger
  • Garlic
  • Onion
  • Habanero peppers
  • African nutmeg
  • Pepper soup seasoning (can be purchased at any Tropical store)
  • Dries Basil leaves
  • Ice cubes
  • African Yam (substitute: russet potatoes)
  • Dried Hibiscus leaves/Jamaican Sorrel
  • Fresh Ginger
  • Pineapple Chunks
  • 2.5 liters of water
  • Sweetener of choice
  • Lemon
  • Spices: salt, Maggi of choice, black pepper

You’ll need

  • 2 medium cooking pots
  • 1 small cooking pot
  • 3 cooking spoons
  • 2 cutting boards
  • 2 knives
  • Blender
  • Soup bowls
  • Glass cup
