Moroccan Lentil Soup

The Moroccan lentil soup is a nutritious and deliciously flavorful dish with just the right amount of spice! It is a hearty, comforting recipe with lentils, chunky vegetables and earthy spices. You don’t have to be vegan to fall in love with this dish! It comes together in just 30 minutes, and it is a great place to start if you’re not familiar with Moroccan cuisine!

Zaalouk

If you are not yet a fan of eggplants, this recipe will definitively make you love them! Zaalouk is a vegan Moroccan warm dip made with eggplants, peppers, and tomatoes. You can serve it as a side garnish to grilled meat or fish. Even meat lovers will savor it with great pleasure!

  • Lentils
  • Eggplant
  • Onions
  • Garlic
  • Potatoes
  • Green or red bell peppers
  • Tomatoes
  • Parsley
  • Olive oil
  • Spices – salt, black pepper, cumin, and paprika
  • Cilantro (optional)

You’ll need

  • A deep pot for the soup such as a Dutch oven or any other pot
  • A pan or a tagine
  • A wooden spoon
  • A cutting board
  • A knife
